Notes: Sanitized glassware stored on floor in racks. Provide separate covered container to store clean utensils. Provide garbage receptacle for bar. Lighting in employee restrooms insuffi-cient. Provide rack for chemical storage in café.
General comments: Overall kitchen is clean and well organized. Sanitizers, dishware, opera-tion, food storage OK. Implement log sheet for use at both dishwashers to record rinse cycle sanitizing (hot water for kitchen and chlorine for bar). Hand washing lavatories operating OK. Make sure to advise employees of double hand washing when returning to station from restroom.

Notes: Freezers not NSF approved. Food containers stacked wet. Reach in refrigerator needs cleaning & gaskets repairs. Storage shelf in kitchen needs resurfacing. Garbage can lids not covering cans. If garbage cans too full to close lid then take trash to dumpster. Keep dumpster closed as well. WaIls behind cooler in coffee area and in back of cooler area need repair. Floor tile under oven in kitchen need repair. Bulb in kitchen needs replacing. Bulbs need to be replaced in kitchen area. Paint, paint thinner, spray paint stored next to the dry goods products and single use items.
General comments: Food temps Hot and Cold. Good. Hot water 140 degree. Good. Remember to log refrigerator temps.

General comments: Food temperatures good in all coolers and hot holding.

Notes: Some cutting boards need lobe replaced or refinished. Gaskets need to be replaced on a few reach in units. Vent over dishwasher dusty. Keep spray sanitizer stored away from food products at all times (i.e. vegetable prep table).
General comments: Good food temps. Clean utensils. Good food storage.
